Blueberry season is in full swing and we enjoy this sweet summer fruit. Many local farms offer ‘pick your own’ which is a great way to spend time as a family and get fresh blueberries. But sometimes you end up with more than you can eat before they turn. Yuck! That’s when it’s great to use the blueberries in different recipes.
I’m not a big breakfast person. But using blueberries in a smoothie is a great way to not only use the berries but prevents me and my teenager from skipping breakfast. Super simple and delicious.
- 1 cup of ice
- 1 cup apple juice
- 1 banana cut into slices
- 1 to 2 cups blueberries
- Place the ice, apple juice, banana, and blueberries in a blender.
- Blend until completely smooth.
- Pour into glasses and serve.
Optional Blueberry Smoothie Ideas
To mix things up you could always add a cup of yogurt for added protein or even freeze the blueberries and skip the ice. Other liquid substitutes for your blueberry smoothie are:
- White grape juice
- Coconut milk
- Almond milk
- Dairy milk
I’ve even added Spinach and Kale for a vitamin boost. It’s all a matter of personal taste, so don’t be afraid to experiment.
